Vegan Caesar Salad & Dressing

Who doesn’t love caesar salad?! Caesar salad is the one vegetable dish that even people who hate vegetables love! It is also a dish that people typically load on the dressing, completely annihilating the benefits of the lettuce or greens and top it with bacon bits. While it may be delicious, it is horribly unhealthy and full of animal cruelty. 

This caesar dressing is none of that.  It is lower in fat content, abundant in nutrients and even more delicious! I always find it more delicious when I know no animal was harmed in the making of my food. Somehow, that translates into the taste…

This dressing has passed the taste test of even the most harsh dairy lovers. It makes about 2/3 of a cups worth and stores very well in the fridge! Although, in my household, it doesn’t really have a chance to last long in the fridge – between the 4 of us, it’s gobbled up within one day, max.

Whatever green leaf you love is ok, although I do recommend the darker ones; remember the darker the leaf, the more nutrients it has. Even better is when you are able to grow your own lettuce. This year, I started an organic garden for the first time. I love going out to pick my lettuce before a meal. It is so fresh and has way more taste!

This recipe is super fast to make and really simple. The hardest part being the mashing of the garlic (which isn’t very hard at all!). I use the device pictured below. It takes 2 seconds, cleans easily and perfectly mashes the garlic, leaving no chunks.

Vegan Caesar Dressing

Ingredients
  1. 1 Tbsp & 1 tsp fresh lemon juice
  2. 2 Tbsp water
  3. 3 Tbsp low fat Vegenaise
  4. 2 Tbsp tahini paste
  5. 1/2 Tbsp mushed garlic
  6. 1/4 tsp salt (or to taste)
  7. 1 Tbsp nutritional yeast
Instructions
  1. Mush the garlic and place in a bowl.
  2. Add the lemon, Vegenaise, tahini, water and salt. Mix well.
  3. Enjoy over lettuce & sprinkle with nutritional yeast!
