Did you know that May is Celiac Awareness Month? Celiac disease is one of the most common chronic gastrointestinal disorders and affects so many people I know, so bringing awareness to it is very important to me. With the only cure being a gluten free diet, sometimes finding what to eat can be a challenge. Thankfully, there are SO many amazing gluten free products available now, you don’t have to look too far to find them. I’ve teamed up with one of my absolute favorite brands Bobo’s Oat Bars to bring you an awesome gluten free recipe this Celiac Awareness Month, since all of their products are certified gluten free. They take it very seriously – operating in a gluten free facility and undergoing daily testing on every batch of oat bars they produce. I could not think of a better brand to partner up with. I seriously love them!

Chia pudding is always a hit, in my books. So versatile in it’s ability to take on many different flavors and textures, chia seeds are a go to for a lot of my dishes. Full of fiber, omega 3s and tons of other nutrients, chia seeds are the perfect way to turn any pudding or jam dish into a healthier alternative. Also effortless in preparation, all it takes is combining the seeds with some liquid and they absorb the liquid and expand on their own. The end result is a gooey-like texture, delicious and healthy. 

Acai Bowl

The acai bowl makes for a beautiful picture. I had spent months looking at photos of acai bowls before actually deciding to make my own. I have loved them in restaurants in the past, so I was very pleased to find out that they are extremely easy to make, and take very little time. You do need a strong blender or food processor though, as in order to keep the consistency thick, you won’t be adding liquid. 

Açai bowls are extremely healthy. The açai berry contains tons of antioxidants, has immune healing benefits and provides you with tons of energy. Those are just a few of it’s benefits – the list goes on. This is the perfect healthy breakfast, as it is filling, easy to make and definitely starts your day on the right track. You can really top your açai bowl with anything. I chose a chia seed & buckwheat mix and fresh fruit, but anything goes.
