Vegan Mini Pizzas with Creamy Garlic Dip

Let’s get something straight: people LOVE their pizza. With over 3 billion pizzas sold in the United States each year, pizza lands itself amongst the most popular dishes year after year after year.  Some people even consider pizza an entire food group, and come to think of it, I have actually never met a person that didn’t like pizza! And for good reason: it is really delicious! It is savoury, comforting and satisfying. It hits all of the right spots, and while I personally don’t consider pizza an entire food group, I must admit that I love it too! A lot.

Pizza is the perfect party food and always a crowd pleaser, so when I started thinking about what I’d be serving at my Super Bowl party this year, I knew I had to include it on the menu. But I couldn’t stop there; no pizza is complete without a creamy garlic dip. Any of my memories of pizza pre-going-vegan always included a creamy garlic dip, and so I started experimenting to recreate the dip I once loved. The recipe below not only replicates the dip I used to get from pizza chains, I think it improves it! It is carnivore approved, devoured every time it’s made and requested each and every get together we have. I do warn you though, there is enough garlic to ward off vampires! So if you and your guests aren’t heavily into garlic like we are, start off with less in your recipe and work your way up.

This Monday is Memorial Day, a day to remember those who served to protect the United States of America. Now, while I may be Canadian, I do spend quite a bit of time in the US, and have many friends and family there – so this holiday has quite a bit of significance for me as well. I know I’ll never truly understand its significance being Canadian, but I still love to honour our southern neighbours and those that fought for such a great country. My thoughts and prayers are with all of the families who have lost loved ones.

Buffalo Cauliflower Wings are a classic when it comes to parties (or any evenings at home too) or game days. The perfect way to veganize buffalo chicken wings, these cauliflower florets transform into the crunchy, spicy and addictive flavours people love so much in the chicken version. If you’re new to The Vegan Jetsetter, I should tell you that I’m a huge believer that every non-vegan dish can be made into a vegan version that tastes the same, if not better. I’m all about limiting the cruelty to animals, the impact on the environment and increasing the health benefits to your body WITHOUT sacrificing taste, so turning such a popular chicken dish into a vegan version was something I was really excited about. A little research and trial and error and here we are. 
 
You’ll be amazed at how easy these cauliflower wings are to make. They don’t fall apart, which if I’m being honest, is always a concern when creating a batter without eggs, and they store well in the fridge for a couple days. If you’re making them in advance of your party and trust yourself not to devour them before your guests arrive (I had a REALLY hard time not doing this), I recommend  just popping them into the oven for 10 minutes on 400°F right before serving, just to crisp them up again. And voila, you’re good to go! Try seeing if they last the night – I bet they won’t. For the ‘wings’, I used this recipe by Peta. To make it Kosher for Passover, substitute the flour with matzo meal.
